Carrot & Coriander Soup

Ingredients

  • 2 tsp olive oil
  • 2 onions, chopped
  • 1 tsp ground coriander
  • 700g carrots, sliced
  • 850ml vegetable stock
  • 2 tbsp chopped fresh coriander
  • Freshly ground black pepper, to taste
  • Fresh coriander sprigs to garnish

Tomato Pasta Sauce

Serves: 2        

Ingredients

  • 1 tsp oil.  1 onion, finely chopped
  • 1 garlic clove, finely chopped
  • 1 tin chopped tomatoes.  2tsp tomato puree
  • Pinch of dried herbs, pepper to taste
  • 210g uncooked pasta. Grated parmesan (optional)

 

 Method 

  1. Heat oil in saucepan or frying pan.  Cook the onion on a medium heat until soft.  *Add garlic and cook a further minute
  2. Add tin of chopped tomatoes, tomato puree and mixed herbs
  3. Simmer gently for 15 mins until the sauce is thick and rich

Vegetable Patties

Ingredients

  • 6 small potatoes
  •  1 red pepper
  •  1 green pepper
  •  1 red onion
  •  1 courgette
  •  1 garlic clove
  •  6 mushrooms
  •  1 egg
  •  Breadcrumbs from 6 slices of bread
  •  1 teaspoon of tomato puree
  •  Dash or Worchester sauce
  •  Parsley and pepper to season

Chicken Tikka Masala

Ingredients

  • 500g (1 lb) Chicken, cubed
  • 100ml Greek Style Yogurt
  • 1 Onion, chopped
  • ½ Lemon
  • 3 tsp Curry Paste
  • 2 tbsp Tomato Purée
  • 2 tbsp Tomato Sauce 
  • 1 tbsp Tandoori Spice Blend
  • 2 tbsp Garam Masala 
  • 1 tbsp Paprika 
  • 1 Red Pepper

Potato Wedges with dip

  Ingredients

  • 4 Large potatoes                                   
  • 1 tablespoon of oil
  • Ground black pepper to season
  • Small tub of low fat crème fraiche
  • Handful of chives
  Method
  1. Preheat the oven to 200C/400F/ gas mark 6
  2. Wash and dry the potatoes leaving the skin on
  3. Cut the potatoes into thick wedges and place into a large mixing bowl
  4. Sprinkle/brush the oil (and any other seasoning) onto the cut potato wedges and mix well

Chicken Cacciatore

Ingredients

  • 4 Chicken Breasts
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 2 400g tins of tomatoes
  • 4 tbsp mascarpone
  • A floret of Broccoli
  • Olive oil
  • A handful of basil

  1. Heat the oven to 190OC (170OC gas)
  2. Fry the onion and garlic in 3 tbsp oil until softened but not coloured
